If the tomatoes are ripe and pink, the jam can have a superb shade. If the colour of the tomato is just too mild, you may also add slightly pink.
Don’t add water when grinding the tomatoes. Including water will take longer for the jam to thicken.
If the paste is watery and takes a very long time to thicken, you’ll be able to combine cornstarch with water.
