For Gajjar Halwa
Components:
– 500g grated carrot (ideally crimson)
– 240ml of milk
– 200g of Khoya
– 75g of sugar
– 2 tablespoons of butter
– ¼ teaspoon of cardamom powder
– 4 tablespoons of chopped nuts (almonds, cashews, pistachios)
Technique:
1. Saute carrots in ghee for 5-7 minutes.
2. Add the milk and prepare dinner till it thickens.
3. Add sugar and khoya; prepare dinner to thicken. Add cardamom and walnuts. Let it cool.
For ice cream
Components:
– 250ml whipped cream
– 50g condensed milk
– 1 teaspoon of vanilla essence
Technique:
1. Whip the cream till smooth peaks kind.
2. Combine the condensed milk and vanilla, then add the cream and halwa.
3. Freeze for 4-6 hours.
For Brandy Snaps
Components:
– 60g flour, golden syrup, brown sugar, butter
– 1 teaspoon of ginger juice
– 1 teaspoon of brandy
Technique:
1. Soften the syrup, sugar and butter; add flour, ginger and brandy.
2. Bake small spoonfuls on a baking tray at 175°C for 8 to 10 minutes.
3. Mould the molds whereas sizzling.
To Serve: Spoon the ice cream into brandy chunks and garnish with mint.

Components:
– 200g grated coconut (50g for rolling)
– 100g of powdered milk
– 150g smooth dates, seedless
– 5g roasted fox nuts (makhana)
– 1 tablespoon of virgin coconut oil
– 8-10 saffron threads
– A pinch of cardamom powder
Technique
1. Combine the dates till they kind a paste. Combine with coconut, milk powder, saffron and cardamom till it varieties a dough.
